Starting the Prep

Well last week I started prepping Dinners for after Mr. Gabriel is born. Last week I did Sirloin Strips in Wine Sauce, Tator Tot Casserole, and Honey Pork Chops. Yumm yumm. And this week we are going to make the Pasties, Buttermilk herb Chix Breast, Cheesy Chix Bundles and Chicken Breast stuffed with Pesto butter. I need to arrange some of my freezer a little better since we do still have a lot of our 1/2 Cow we purchased this year in there too.

Here is the Tator Tot Casserole recipe I use I know everyone has their own family favorite version of this and here is ours.



Tator Tot Casserole (freezer style)

2lbs Ground Beef
1 onion
1 10 3/4 can Cream of Mushroom
1 10 3/4 can Cream of Chicken
16oz Shredded cheese
12 oz Sour cream
1 bag tator tots

Brown Onion and Ground Beef, Drain, then layer the ground beef/onion mixture, cream of mushroom, cream of chicken, sour cream, Shredded Cheese and top with Tator tots. Put in Freezer

Cook Day- Thaw overnight in frig and then 375 for an hour! May need a little longer if not all the way thawed in frig the night before.

I am Currently finding new recipes from a new freezer book I like. It is called Don't Panic Dinner's in the Freezer. I rented it from the library but due to others wanting to borrow it I couldn't renew it so I found it on Amazon for like $8 something so I bought myself a copy and loving having my own copy.


This last weekend has been a little much for me. We went to a wedding in LaCrosse for one of Nick's High school buddies. So we packed up the boys and headed over. Luckily the hotel we stayed at had a little water park area and that was great because our 3 water monkeys had a blast in there. Adam was the scariest of them all we had to watch and make sure he wasn't drowning himself since he seemed to have no fear what so ever of the water no matter what he did to himself. He flipped over the riding animal, got dumped on by the over head bucket, would nose dive down the slide in the water. Nothing scared him. Noah was a little more reserved with the water but he had a great time with the Balls and the boat that was there. Isaac learned to swim under the water. He and an older boy (maybe 6 y/o) were hanging out and he showed Isaac how to put his face in the water and sorta froggie it. This is exciting because he will be better off when Lessons start in June.













Come June Isaac will be in Lesson 1 and Noah will be in Shrimp 1 for swimming lessons so it will be fun to see how they do.

Mother's Day was a day of being torn between celebrating with my boys and missing my friend Zoe. She passed away a year ago that day so I had her on my mind a lot. I have tons of stuff to do to get ready for Gabriel and feel like I am going backwards all the time. I just think my plate is way way over full and really am trying to figure out what to knock off it. I know a lot of people have mentioned my brain distance lately. Like I am here but not. Mostly that is just me dealing with what to accomplish next. I want to get the garden in and I have wedding invites I was asked to make.. still to do. Plus we are down to the last 2 weeks of Let's play music and school for the year. And we are still on Stand by waiting to hear if Nick will be going to his Army School some time soon or if he will just be gone for AT in June. Just so much is just hanging out there that has yet to be nailed down that I am feeling a wee bit overwhelmed. I think most of this is just what am I going to do with 3 little boys if I go into labor alone. Dunno. I think that is weighing on my mind the most and leaving me most unsettled.
