Funny Things My Kids Have Said!!!!

Well Just found a great site that will print my blog into a book.. So I have sent off 2009 to the printer to see if I like the product if so I will be sending each year to the printer so I can remember all fun stuff through the years and I can save all these for the boys to look back and see how cute and silly they were as kids.  :D

So I thought I would do a page to remember the fun things my kids have said.  Of course this post is taking me forever because I am going through my Facebook wall and finding all the funny things I have put down about the kiddos/

Funny Rememberalls.....

2010

Feb 12 2010-- Isaac came up to me and told me he had an imaginary friend.. His name is Kearny and he is a Black Dog who is a Doctor.  (Since then Kearny has become his Blue body pillow he sleeps with.- Present Update)

Feb 13 2010-- I was making a Cake for my mom and Noah decided to take a big chunk out of it.  I apologized that it has been Noahrized... And My mom said it was extra special because of that.. (Just thought that was an adorable memory)

March 2010-- Isaac discovered he loved tea parties and would beg for a tea party when his friend Aliyah would come over or when he would go over to her house.. So Sweet.

April 19, 2010-- One of my good friends posted this on my page (just less than a month before she passed but her son said this about my boys.. So SWEET.. I miss you Zoe Silver)

Dec 16, 2010 (Another one from a friend in regards to our kids.. Well sorta... But still freaking hilarious)

I had to share this with you: Henry looked at the picture on the wall in Leo's room and asked "why are the animals getting on the boat?" I said "that's Noah's Ark." Henry asked, "does Isaac have one?"

Jan 2, 1011-(Noah almost 3)  it's so much fun to listen to Noah and his Trains. Noah: "One day on the isles of sodoor. (Percy:) Hi Thomas, (Thomas:) Hi Percy, Where's Gordon?, oooh ooohhhh." ~note: Thomas and Percy have different Noah voices.. :D

Jan 19, 2011-Isaac is way to cute!!! He just brought me a linkin toy he put together that is like a fan to cool me off and he just got me a big glass of water from the Frig not sure why he thinks I am warm but he is taking care of water and fan! lol He says here mom feel better!

Feb 10, 2011-Who knew teaching kids how to eat chicken off a drumstick was so difficult? Today was all 3 boys first go at Drumsticks. Noah kept asking to open the chicken. Then turned into a piranha. Piranhas leave more meat on bones then this kid.

  Feb 21, 2011- (Adam 16mts old)
found out tonight just how dedicated and attached my baby is to the Monkey blanket mommy bought for him. Thing needs to be washed and it was like prying it from vise grips. Put it in the wash basket and it was back in the crib. REPEAT a couple times. Hid it under more clothes in the wash basket and it never made it down stairs it was in the chair where he was cuddling with it. Finally baby asleep Blanket in the WASH!!

March 3 2011- things I learned today. 1- Nothing ripens bananas faster than being in a diaper bag for a few hours. 2-Nothing brings you out of relaxing massage and back to reality better than a child with #2 running down his pants leg. Thought I would share.

Isaac was talking about making mommy breakfast in bed last night.. Didn't realize he was going to remember or wake me up early for it.. But it was fun.. breakfast in bed with my 3 little guys. Coffee, Apple slices and Toasted PB and J

April 28, 2011  after a vigorous game of Wii Party Isaac comes to me and says water is coming out of my head again... HUH? Oh wait Isaac that is just sweat. lol

May 20, 2011---- YUPP wanted to remember this.. My Little Natural Disasters.... (we have since had Earthquake Gabriel Added to the Natural Storms that wreak havic on our house)
well the house is mostly clean until the extreme weather patterns hit again. In case you don't know Hurricane Isaac, Tornado Noah and Tropical Storm Adam are currently Active in this location.

2012

Jan 30, 2012-my Super Power (super sniffer) just came in handy. Shortly after turning on the preheat I smelled plastic burning. Turns out the 3rd son put 5 hex bugs in the oven for storage. Good thing my super power saved us from 5 hex bugs exploding batteries inside my OVEN! Grrr.. KIDS

Jan 31, 2012- Yawn... Woke up early to all my guys singing me Happy Birthday and some eggs and toast breakfast in bed.. So sweet.

April 21, 2012- Well Geez. I walked past Isaac and grabbed one of his Gold Fish Crackers on my way to the kitchen. In the Kitchen I hear "Ha, now you can't take anymore they all have my germs on them!" Come back in and he bit off all their heads.. Well Duh I don't want a headless Goldfish Guess it is time to sneak them off Adam's plate instead.

Recipe Treat~
FUDGE OATMEAL BARS
Melt over low heat:
1 can Eagle Brand sweetened condensed milk
1 cup chocolate chips
1 cup butterscotch chips
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon vanilla
Mix together:
1 cup butter
2 cup brown sugar
2 eggs
1/2 teaspoon salt
2 1/2 cup flour
1 teaspoon baking soda
Add 3 cup oatmeal.
Press 2/3 of the oatmeal mixture in a greased (11 x 15 x 2") pan. Spread chocolate mixture over top; sprinkle rest of oatmeal mixture over top. Bake 20 minutes at 350 degrees.

Buffalo Chicken Dip.. Got this from my Friend Anita P.
2 Cups cooked shredded Chicken
2 8oz packages of Cream Cheese
1 cup of Ranch
3/4 cup of Frank's Hot Sauce
1 1/2 cups shredded Cheddar Cheese
mix and put in a crock pot to warm up and serve.......

Ingredients

  • 5 cloves
  • 2 dried guajillo chiles (if you can't find these, then use 2 chiles de arbol, and more paprika for color)
  • 2 green cardamom, husks discarded, seeds retained
  • 1 black cardamom, husk discarded, seeds retained
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon fenugreek seeds
  • 1 cup whole fat plain yogurt
  • 1/4 cup peanut or canola oil
  • 2 tablespoons malt vinegar or lime juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground turmeric
  • Pinch cayenne pepper
  • 8 cloves garlic, minced
  • 2-inch thumb ginger, peeled and minced
  • 1 packet boneless skinless chicken thighs (1 1/2 pounds usually)
  • 1 teaspoon honey
  • Salt and freshly ground black pepper
  • Couple of extra limes, for garnish

Directions

To make the marinade, toast the cloves, whole chiles, both types of cardamom seeds, coriander seeds, fennel seeds and fenugreek seeds in a cast-iron skillet until fragrant, 3 minutes or so, shaking the pan. Then, pour the spices into a spice grinder and grind them until you get a fine powder. 


In large bowl, whisk together the spice mixture you just made with the yogurt, oil, malt vinegar, salt, ground cinnamon, paprika, turmeric, cayenne pepper, garlic and ginger until well combined. It should smell amazing! Taste and adjust with more salt if it needs it.


Reserve 1/3 cup of the marinade and set aside; you're going to make a sauce out of this reserved marinade.

Prick the chicken thighs with a fork. Add the thighs to the rest of the marinade, and toss to coat. Marinate at least 1 hour in the fridge, and at most overnight.


When you're ready to cook, line a baking sheet with foil, and turn your broiler on. Place each chicken thigh on the baking sheet, making sure each one is coated with the marinade, but isn't swimming in it. Cook the chicken thighs under the broiler until starting to blacken, about 5 minutes. Then turn the oven to 350, and cook until a meat thermometer inserted in the meatiest part of the thigh registers 160 degrees F, another 10 minutes. Remove from the oven.


While the chicken is cooking, pour the reserved marinade into a small saucepan, along with 1/2 cup water and the honey. Bring to a gentle boil over medium-low heat, whisking all the time. Taste and season with salt and pepper. Remove from the heat and pour into a small bowl or gravy boat for serving.


Serve the chicken thighs on a platter with a fresh squeeze of lime and a drizzle of the sauce.

Starting the Prep

Well last week I started prepping Dinners for after Mr. Gabriel is born. Last week I did Sirloin Strips in Wine Sauce, Tator Tot Casserole, and Honey Pork Chops. Yumm yumm. And this week we are going to make the Pasties, Buttermilk herb Chix Breast, Cheesy Chix Bundles and Chicken Breast stuffed with Pesto butter. I need to arrange some of my freezer a little better since we do still have a lot of our 1/2 Cow we purchased this year in there too.

Here is the Tator Tot Casserole recipe I use I know everyone has their own family favorite version of this and here is ours.



Tator Tot Casserole (freezer style)

2lbs Ground Beef
1 onion
1 10 3/4 can Cream of Mushroom
1 10 3/4 can Cream of Chicken
16oz Shredded cheese
12 oz Sour cream
1 bag tator tots

Brown Onion and Ground Beef, Drain, then layer the ground beef/onion mixture, cream of mushroom, cream of chicken, sour cream, Shredded Cheese and top with Tator tots. Put in Freezer

Cook Day- Thaw overnight in frig and then 375 for an hour! May need a little longer if not all the way thawed in frig the night before.

I am Currently finding new recipes from a new freezer book I like. It is called Don't Panic Dinner's in the Freezer. I rented it from the library but due to others wanting to borrow it I couldn't renew it so I found it on Amazon for like $8 something so I bought myself a copy and loving having my own copy.


This last weekend has been a little much for me. We went to a wedding in LaCrosse for one of Nick's High school buddies. So we packed up the boys and headed over. Luckily the hotel we stayed at had a little water park area and that was great because our 3 water monkeys had a blast in there. Adam was the scariest of them all we had to watch and make sure he wasn't drowning himself since he seemed to have no fear what so ever of the water no matter what he did to himself. He flipped over the riding animal, got dumped on by the over head bucket, would nose dive down the slide in the water. Nothing scared him. Noah was a little more reserved with the water but he had a great time with the Balls and the boat that was there. Isaac learned to swim under the water. He and an older boy (maybe 6 y/o) were hanging out and he showed Isaac how to put his face in the water and sorta froggie it. This is exciting because he will be better off when Lessons start in June.













Come June Isaac will be in Lesson 1 and Noah will be in Shrimp 1 for swimming lessons so it will be fun to see how they do.

Mother's Day was a day of being torn between celebrating with my boys and missing my friend Zoe. She passed away a year ago that day so I had her on my mind a lot. I have tons of stuff to do to get ready for Gabriel and feel like I am going backwards all the time. I just think my plate is way way over full and really am trying to figure out what to knock off it. I know a lot of people have mentioned my brain distance lately. Like I am here but not. Mostly that is just me dealing with what to accomplish next. I want to get the garden in and I have wedding invites I was asked to make.. still to do. Plus we are down to the last 2 weeks of Let's play music and school for the year. And we are still on Stand by waiting to hear if Nick will be going to his Army School some time soon or if he will just be gone for AT in June. Just so much is just hanging out there that has yet to be nailed down that I am feeling a wee bit overwhelmed. I think most of this is just what am I going to do with 3 little boys if I go into labor alone. Dunno. I think that is weighing on my mind the most and leaving me most unsettled.

Day 4 of Meatloaf

Day 4 was postponed till today since we had very special guests all day and I wanted to play instead of cook.. So
Day 4 here we go.

Sage Turkey Meatloaf

INGREDIENTS

MEAT LOAVES

1 1/2 lbs ground turkey

1 c shredded apple (1 med-size)

1/2 c panko crumbs

2 tbsp minced, fresh sage

1/2 tsp salt

1/2 tsp black pepper

Cooking spray

PREP: 10 Minutes

COOK: 25 Minutes

ONION + CIDER GRAVY

1 tbsp Smart Balance

1 large sweet onion (Vidalia), vertically sliced

1 c apple cider

1 c fat-free, low-sodium chicken broth

1 tbsp cornstarch (organic)

1 tsp water

1/4 tsp salt

PREP: 5 Minutes

COOK: 34 Minutes


Directions:

MEAT LOAVES

  • Preheat oven to 425 degrees.
  • Combine first 6 ingredients in a large bowl.
  • Divide turkey mixture into 6 equal portions, shaping each portion into an oval-shaped loaf.
  • Place loaves on a broiler pan coated with cooking spray. Bake for 25 minutes or until thermometer registers 156 degrees.

Cal 283; Fat 11.9g; Protein 22.5g; Fiber 1.2g

ONION + CIDER GRAVY

  • Melt Smart Balance in a large nonstick skillet over medium-heat; add onion to pan. Cook 10 minutes or until golden brown, stirring frequently.
  • While onion cooks, bring cider and broth to a boil in a medium saucepan; boil for 23 minutes or until reduced to 1 cup. Combine cornstarch, water, and salt, adding mixture to the cider reduction, stirring constantly with a whisk.
  • Cook over medium heat 1 minute or until slightly thickened. Stir in onion.
  • Serve 1 meat loaf and 1/4 c gravy.

Cal 64; Fat 1.9g; Protein 0.8g; Fiber 0.5g

Day 3 of Meatloaf

Day 2 was another Success but I didn't really have any doubts with this one because this is the one Recipe I have made before and the family loves.

Ingredients

  • 1 1/4 pounds ground beef
  • 4 (4 ounce) links Italian sausage, casings removed
  • 1 egg, beaten
  • 1 small green bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup dry hot wheat cereal
  • 1/2 cup milk
  • 1 dash Worcestershire sauce
  • salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Chop sausage finely. In a large bowl combine beef, sausage, egg beat, bell pepper, onion, cereal, milk, Worcestershire sauce, salt and pepper. Mix together and press into a loaf pan.
  3. Bake in the preheated oven for 1 hour, or until cooked through. Drain grease from loaf pan periodically during baking. Let stand 10 minutes before serving.

Day 2 of Meatloaf week

Day 1 was a success I need to get a baster so I can periodically suck up the extra fat.

Day 2 Bacon Swiss Meatloaf

Bacon Swiss Meatloaf


2 bacon strip, crumbled
2 egg, beaten
2/3 butter crackers crushed
1/3 c shredded Swiss cheese
3 T chopped onion
2 garlic clove, minced
1/2teaspoon salt
1/4 teaspoon pepper
1 lb. Ground beef
In bowl combine egg, crackers, 4 Tablespoons shredded cheese, chopped onion, garlic, bacon, salt and pepper. Add beef into mixture and combine. Shape into loaf and freeze wrapped in tin foil or in a ziploc bag. When ready to cook take out of the freezer and place in a loaf pan. Top with more bacon pieces if desired. Bake at 350 degrees for 30 minutes- 1 hour. Test with a meat thermometer.

Day 1 of Meatloaf Week

Well I thought it would be fun and my brother coaxed me to do a 5 day Week of Meatloaf.

Day 1 Mexican Meatloaf

Ingredients

  • 2 eggs, lightly beaten
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 1/4 cup diced onions
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds lean ground beef
  • 1 cup crushed hot and spicy cheese flavored crackers
  • Topping:
  • 1 cup shredded Cheddar cheese
  • 1 cup chunky salsa

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Combine the eggs, tomatoes, onion, Worcestershire sauce, salt, and pepper in a large mixing bowl. Gently stir the ground beef and crackers into the egg mixture. Press into a 8x8 inch square baking pan. Bake in preheated oven for 35 minutes.
  3. Remove the loaf from the oven, and drain any liquid from the pan. Spread a layer of salsa on top of the loaf, and sprinkle with shredded cheese. Return the loaf to the oven; bake until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, about 15 minutes.

I personally will not be eating this because it has tomatos in it and I am Tomato intolerant. But I will let you know tomorrow before tomorrows recipe how the 5-guys (hubby, Brother, and our 3 little guys) liked it.

Cooking Adam up some Yummies

Hi I am cooking up some babyfood today.. Buying baby food is one thing.. But Making it is Fun too.. here are some recipes we are making.

Mel-Ana 8+ months

1/2 cantaloupe cubed
4 Bananas halved

Put fruit in food processor and blend to the consistency your baby is taking. Right now we are pretty Lumpy and getting ready to start more solid food items and pick up food.


Squaccoli Recipe taken from NurtureBaby


(6-9 Months)

So, it’s fun to say. And it’s a delicious way to introduce greens into your little one's diet, as the mild, sweet winter squash tones down the strong broccoli flavor.
1 medium winter squash*
1 tbsp olive oil
1 medium stalk broccoli
1/3 cup water
Preheat oven to 425 degrees. Cut winter squash in half; scoop out seeds. Coat squash halves in olive oil and bake for 60 minutes, or until flesh is soft.
Meanwhile, cut broccoli into small pieces and put in steamer. Steam for 5-6 minutes, or until broccoli is tender.

Let cooked winter squash cool to the touch and scoop out flesh from skin. Place peeled squash in blender, along with broccoli florets and blend until completely smooth. Add water if necessary to achieve desired consistency.
Distribute mixture evenly amongst ice cube trays or cupcake tins, dependent upon desired portion size.
*You can substitute fresh winter squash with frozen, organic pureed winter squash. It’s readily available at most grocery stores and makes for a great time saver! Just heat squash in microwave and add to pureed broccoli.


Hearty Beef Stew Recipe taken from NurtureBaby and modified (one of my favorite sites)

(9-12 Months)

This recipe could not be easier to prepare, as you cook all the ingredients in a slow cooker. Once pureed, it’s creamy, meaty texture is divine.
1 small onion, diced
4 cups of homemade vegetable stock*
5-6 small red potatoes, diced
(we suggest leaving the skins on for added nutrition)
½ lb. organic lean beef, diced (Can use sirloin or “mock” tenderloin)
1 sprig of fresh thyme
2 carrots peeled and diced
*Can substitute with organic, low sodium stock. However, to ensure gluten free version, use homemade.
Add all ingredients to a slow cooker and simmer 5-6 hours on low. Let stew cool once completely cooked. Remove thyme stem and add to food processor. Puree until you reach desired consistency.
Disperse into ice cube trays or cupcake tins and cool. Freeze, remove from tin, and store in freezer bags or reusable plastic containers.

Zucchini Bread Recipe

Ingredients

2 eggs, beaten
1 1/3 cup sugar
2 teaspoons vanilla
3 cups grated fresh zucchini
2/3 cup melted unsalted butter
2 teaspoons baking soda
Pinch salt
3 cups all-purpose flour
1/2 teaspoon nutmeg
2 teaspoons cinnamon
1 cup chopped pecans or walnuts (optional)
1 cup dried cranberries or raisins (optional)

Method

1 Preheat the oven to 350°F (175°C). In a large bowl, mix together the sugar, eggs, and vanilla. Mix in the grated zucchini and then the melted butter. Sprinkle baking soda and salt over the mixture and mix in. Add the flour, a third at a time. Sprinkle in the cinnamon and nutmeg and mix. Fold in the nuts and dried cranberries or raisins if using.

2 Divide the batter equally between 2 buttered 5 by 9 inch loaf pans. Bake for 1 hour (check for doneness at 50 minutes) or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly.

Makes 2 loaves.

Cran-almond Breakfast Cookies

1 1/2c Brown Sugar
3c rolled oats
4 c flour
1T Baking soda
1t baking powder
1/4c canola oil
1/2 c prune puree
2 T water
5 egg whites
1 1/2 t vanilla extract
3/4 c unsweetened dried cranberries
1/2 c chopped almonds
1/3 c chopped apricots
1/3 cup apple sauce
1/2 c honey

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.

In large bowl, stir together the oats, flower, baking soda, salt and brown sugar. Make a well in the center and pour in the canola oil, prune puree, water, egg whites, vanilla, honey and applesauce. Mix until well blended. Add the cranberries, almonds and apricots. Scoop cookies using an ice cream scoop or roll into golf ball sized balls. Pkace cookies 2 inches apart onto the prepared cookie sheets and flatten to 1/2 in tall with wet hands. These cookies do not flaten very much while backing

In preheated oven bake 14-16 min.

My Easy Garlicy Shrimp Scampi

Well the family loved it so I guess I would post it.

Garlicy Shrimp Scampi

bag of already cooked lil shrimps.. (thawed)
8T Butter
2T Minced Garlic
6T white wine
2t dried parsley
4T Flour
Dash of lemon to taste
Salt and pepper to taste
1lb pasta

Cook pasta according to package. Melt butter and add garlic, wine, parsley cook for 5 min add flour let thicken. Add Shrimp and cooked pasta then salt pepper and lemon to taste.. Serve..

Recipe

Chicken Pot Pie filing over Biscuits.

1/2 stick butter
1/2 cup finely diced onion
1/2 cup finely diced carrot
1/2 cup finely diced celery
2 cups Chicken, diced or shredded (or both!)
1/4 cup flour
2 cups low-sodium chicken
splash of white wine (optional)
1 cup heavy cream
Frozen peas (optional)
Fresh thyme, chopped
salt and pepper to taste

1. Melt butter in a skillet or dutch oven. Add onion, carrots, and celery, and cook until translucent (a couple of minutes.)
2. Add Chicken and stir. Sprinkle flour over mixture and stir. Cook over medium heat for a couple of minutes, stirring constantly.
3. Pour in chicken broth, stirring constantly. Splash in wine (you can leave this out if you’d like.) Pour in cream. (May add frozen peas at this point if you’d like.)
4.Bring to a slow boil and allow mixture to cook and thicken for a few minutes. Add salt and pepper to taste (do not underseason), and fresh or dried thyme to taste. Do one final taste at the end and add what it needs.
5.Pour mixture over Biscuits right before serving.

Well this weekend We tilled the garden and got stuff around for building a bookshelf with doors for a pantry in the house we are getting ready to sand and paint then I will post the awesome photos!! But for my first big project with little to no help it looks pretty good.

Today Zoe and I went to Menard's and got material to build the raised garden bed.


While I put it together with support and camera action from Zoe, the kids played in the front yard.. Pretty Hard too lol.. Noah didn't get a nap and you can plainly see he still needs on.. lol..

for some reason it didn't rotate.. but I was making cookies and he Zonked out infront of Nick.. lol

Later I made a breakfast cookie recipe that I altered a bit but they are supposed to resemble the Erin Bakers breakfast cookie.

Ingredients:
2 cups brown sugar
2 1/2 cups rolled oats

1 teaspoon baking powder

1/4 cup chopped walnuts

Yummy Stew


Chicken Sweet Potato Groundnut Stew

1 Large onion Chopped
2 Tbs Olive oil
2 Large Carrots Large chunks
3/4 inch Fresh Grated Ginger
1tsp Salt
1/4-1/2 tsp cayenne pepper to taste.
2 Large Sweet potatoes chopped
3 cups Chicken stock (2 14oz cans)
3 Chicken Breasts Chopped and cooked
2/3 c peanut butter
1 cup roasted peanuts

Saute onions in oil until translucent. Add carrot, ginger, salt and cayenne pepper and aute for 5 min. Add sweet potato and stock bring to a boil then reduce heat cover and simmer for 10 min. Then add the cooked chicken breasts and simmer for 5 more min or veggies are tender. Stir in the peanut butter and let thicken about 2 min. Serve Garnished with peanuts.

Cookies

So in an email I got a cookie recipe claiming that it was somebody who got ripped off when they wanted to purchase the recipe.. After snooping it the whole email was false but the recipe still sounded good so last night my friend Zoe and I made the cookies.. They turned out pretty good.. A lot of sugar. May reduce the sugar next time but they were yummy. So here are photos and the recipe.





NEIMAN-MARCUS COOKIES (recipe may be halved)
2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
-Measure oatmeal, and blend in a blender to a fine powder. Cream the butter and both sugars. Add eggs and vanilla, mix together with flour, oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey bar, and nuts. Roll into balls, and place two inches apart on a cookie sheet. Bake for 10 minutes at 375 degrees.
-Makes 112 cookies.


Well also for yesterday we the boys and I went to Frosty Flicks with Ally and River and another friend and child. We saw Ice Age Dawn of the Dinosaur. Good movie never saw it before. But for $3 for kids 3 and up plus adults it was worth it.. You even get a free bag of popcorn with each ticket. Most definitely need to do that again. There are a few more movies I haven't seen that would be great to take the boys. Especially since this is a kids movie so there are a ton of children there and they can all chat and be loud.. lol Well. That was pretty much our weekend. Nick had drill so it is just the boys and I hanging out. On other fun news. For 2 nights in a row Adam has slept through the night. Keeping our fingers crossed that this is the start of sleeping through the night.. I would be super excited and grateful. I am super sleepy lately.

Yesterday! A day of firsts!

So yesterday was a busy morning. Typical run my brother to school. Then we swung by the bank, Starbucks, and then got the boys some hair cuts. They look so cute.. Awe!! Then off to Play and Learn.
Isaac and Noah made presents for Oma and Grandma Klauer. And each made some play dough. While at play and learn Adam Rolled over for the first time.. Then I put him back to have him do it again so I could catch it on video.


He also in the process of rolling over learned to push up his upper body so another first.

As for me I made for dinner Chicken Scaloppine (for the first time) Can you say EASY and YUMMY.. Here is the recipe.

Chicken Scaloppine

  • 3 Chicken breasts
  • 1 teaspoon poultry seasoning
  • Kosher salt and freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 2 tablespoons canola oil
  • 2 tablespoons unsalted butter
  • 1 (14.5-ounce) can chicken broth
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh parsley leaves (I used dried 1 teaspoon)
  • 1 tablespoon chopped fresh basil leaves (I used dried 1 teaspoon)
slice Chicken breast in half, lengthwise. Pound the 4 pieces between sheets of plastic wrap to flatten them, about 1/4-inch thick. Sprinkle with poultry seasoning and season with salt and pepper, to taste. Coat the chicken with the flour, shaking off any excess.

In a large skillet over medium-high heat, add the oil and butter. Mix together and when the butter has melted add the chicken, working in batches, until they are golden brown, about 4 to 6 minutes per side. Remove the chicken, to a serving platter, cover and keep warm. Add the chicken broth to the pan and cook it over high heat until it reduces by half and thickens slightly, about 5 minutes. Stir in the lemon juice, parsley and basil. Taste, and adjust the seasoning with salt and pepper, if needed. Pour the sauce over the cooked chicken.

Served this with Cheesey sliced potatos.. YUMMY!! Again Easy Peasy!


On a sour note poor Isaac and Noah are not feeling well. Isaac actually put himself to bed at 315pm and slept till 6am today. He seems to be feeling better. They both have icky snotty noses.. Good thing I am stocked up on Boogie Wipes.

Well Enjoy the video I just wanted to put it on that he is doing so well. On a Fun Note it took me 2 months of not really doing anything but I am finally back into normal clothes and out of my maternity clothes.. Yippee.

Amazingly Still Low Blood Pressure.

Funny how things are.. I have crazy low blood pressure even when I feel like everything is spiraling out of control in my world. That is just too funny.

Thursday- Was my cooking day 3 out of 5 and after I think that I have decided to do only 4 cooking days that will give me 24 meals which will fit in my freezer but I don't think 30 will not with the rest of my beef order still at the bottom. So I already have the recipes picked for Next week and I think I will only cook one on Thursday the other ones are so easy I will probably just mix together this weekend when I go grocery shopping.

Today- I went early to get some volunteer hours in for accounting at SAA. Then ran to my doctors appointment. I am 34.5 weeks along. Measuring up perfectly. Everything looks great. And even though my world is topsy turvey most days I still hold great at 90/50 for blood pressure.. I am usually around 85/50. I am home now and figured I would blog a few things while I start the laundry and the house cleaning for tomorrow's Dove Party. It will just be Noah and I this weekend. My MIL and FIL offered to play with Isaac all weekend. So it will be nice to get a few things done. And run a few errands this weekend with only one in Tow.

So like I said above.. I am super excited about my Dove party tomorrow.. Dove as in Dove Chocolate. I have never hosted one or been to one so I really don't know what to expect but I think it will be fun to have some adults over. I think my RSVP list is around 11-12 adults and 8-9 kiddos. Including me and mine. Crazy a lot of people in my little house. If the basement was complete we could have the kids in the play room downstairs but may just have them outside to play for a while. Super Excited....

Sunday my uncle is planning on coming up to help correct the stuff we need to get our ruff ins oked. So hopefully I can call in inspections again Monday and start Drywalling later this coming week.. Soooo Close yet still so far.. lol.

Well here are my recipes for the coming weeks cook day my final one before the baby arrives.

Cooking Day 4 recipes

Cheeseburger 'n' FF Casserole

1lb ground beef
1 can of cheddar cheese soup
1 can mushroom soup
1/2 pg onion soup mix
1/2 bag of steak FF
2c of cheddar cheese

Brown ground beef, Drain, Stir in Soups and soup mix. Pour into casserole dish. Top with FF and Shredded Cheddar cheese.
Cooking day. 350 for 45 min

Terriyaki Chicken

1/2 c soy sauce
1 1/2T red wine vinegar
1 garlic clove minced
1/2c sugar
2t sesame oil
3/4t ground ginger
1 lb frozen chicken breasts

Stir ingredients together pour in a ziploc bag over the 1lb of frozen chicken breast. Freeze

cooking day- Thaw bake 350 for 35 min or grill indoors or out

Honey Balsamic Slow cooker chicken

4-6 chicken breasts
1/2c chicken broth
1/3c olive oil
1t Worcestershire sauce
2t lemon juice
2T minced Garlic
1/3c soy sauce
1/4c honey
2 t balsamic vinegar
1t sesame oil

mix all ingredients together and pour over chicken. then freeze in a ziploc bag

Cooking day thaw in frig overnight then into the crockpot for 7 hours on low or 5 on high

Thursday.. Cooking day 3 of 5.

So this is going to be cooking day number 3 which will have us up to 18 meals prepped and ready to to be made. Yumm.. Tomorrow I will be making, Chicken pot pies, Chicken Cordon Bleu packets, and Bacon Swiss Meatloaf.

Chicken Pot Pies (am going to make big ones in a casserole pan since this is such a big hit with the family)

Cooked Chicken- As much as you like in your
2 pie Crust
1 can of Cream of Chicken soup
1/2 cup Milk
1t of garlic
salt and pepper to taste.
1 bag of frozen mixed veggies.

Lay out the pie crust in your pie tin. Mix all other ingredients. Pour into pan and cover with other crust. Cover and freeze

Cooking Day-- Thaw overnight in frig. cut vent holes into pie crust, spray the top with nonstick cooking spray and cook 350 for 35 min.

Chicken Cordon Bleu

Cresent roll Dough
1/4c. grated Parmesan
2c. chicken breast, cooked and diced.
1c. ham cooked and diced
1/3 c. sour cream
1/2c. shredded swiss cheese

In a mixing bowl mix, Parmesan cheese, swiss cheese and sour cream. Add diced chicken and ham and coat evenly. Divide evenly between the pockets about 1/4 cup of mixture. Fold one side over the other and use a fork to seal edges. Transfer pockets to baking sheet and bake at 375 for 10 min be careful not to brown. cool and freeze individually once frozen you can put them in a bag together.

Cooking day-- Thaw in frig than re heat in oven or microwave.

Bacon Swiss Meatloaf

1 bacon strip, crumbled
1 egg, beaten
1/3 Cup butter crackers crushed
5 Tablespoons shredded Swiss cheese
4 ½ teaspoons chopped onion
1 garlic clove, minced
¼ teaspoon salt
1/8 teaspoon pepper
½ lb. Ground beef
In bowl combine egg, crackers, 4 Tablespoons shredded cheese, chopped onion, garlic, bacon, salt and pepper. Add beef into mixture and combine. Shape into loaf and freeze wrapped in tin foil or in a ziploc bag.

Cooking day- When ready to cook take out of the freezer and place in a loaf pan. Top with more bacon pieces if desired. Thaw overnight. Bake at 350 degrees for 30 minutes- 1 hour. Test with a meat thermometer.

68 pounds!

Wow so went to the doctor today everything is looking good and on track for baby Adam I am measuring exactly 33 and I am 33 weeks. My heartburn is keeping me up at night so he told me to pick up some Prilosec OTC it is once a day pretty expensive stuff so hopefully it works. While we were there we all got weighed because my kids just think it is fun to watch me and had to participate today. Isaac is 36 and some change and Noah is 32 and some change so when I am picking them both up holy 68lbs!! That is just crazy that my 19mt old is only 4 lbs lighter than my 3.5 year old. I know that they taper off pretty dramatically in the preschooling years but geez.. Chubby ubby.

I also picked up my groceries for my Thursday cooking session I have planned we are making 2- Tator tot casseroles, 2 cream cheese chickens, and 2 dijon pork chops. All sound YUMMY!

Tator Tot Casserole (freezer style)

2lbs Ground Beef
1 onion
1 10 3/4 can Cream of Mushroom
1 10 3/4 can Cream of Chicken
16oz Shredded cheese
12 oz Sour cream
1 bag tator tots

Brown Onion and Ground Beef, Drain, then layer the ground beef/onion mixture, cream of mushroom, cream of chicken, sour cream, Shredded Cheese and top with Tator tots. Put in Freezer

Cook Day- Thaw overnight in frig and then 375 for an hour! May need a little longer if not all the way thawed in frig the night before.

Cream Cheese Chicken

1 .7-ounce envelope Italian dressing mix
1/2 cup butter
2 pounds boneless skinless chicken breast
1 10.75-ounce can cream of chicken soup
1 8-ounce package cream cheese

Turn slow cooker on High. Place butter in bottom of slow cooker. When the butter has melted, add one envelope Italian dressing dry mix. Stir into butter until well mixed. Cut chicken breasts into 1" strips. Place in slow cooker and stir to coat with butter and dressing mix. Cover and cook on High for 2 hours. Remove chicken to plate to cool. Add cream of chicken soup and cream cheese. Stir to melt and mix well until smooth and creamy. Remove sauce from slow cooker and allow to cool. Place chicken and sauce into a gallon resealable freezer bag. Label. Freeze.

Cooking day- Thaw. Heat until piping hot and bubbly. Serve over mashed potatoes, rice, or hot buttered noodles.

Dijon Pork Chops Freezer Recipe

4 boneless pork chops
1/3 cup Dijon mustard
1 tbsp Worcestershire sauce
2/3 cup Italian seasoned bread crumbs (can use plain if thats all you have but add a dash of italian seasoning)

In a bowl, combine Dijon mustard and Worecesterhire sauce. Lightly season the four pork chops with salt and pepper to taste, if desired. Then use a pastry brush to brush each side of the pork chops with the Dijon mixture, or you can use a fork to dip each pork chop in the mixture. Next, coat each side with the Italian seasoned bread crumbs.

Place on cookie sheet flash freeze in the freezer. After a few hours, place the pork chops in a freezer bag or container. You can freeze them in the container immediately, but flash freezing first will allow you to cook one or two at a time, rather than all four.

On cooking day: Thaw in refrigerator or cook directly from freezer. Set your oven to the broil setting and allow to preheat. Place pork chops on a broiler pan (or use a cookie sheet with a baking rack on top to allow the drippings to fall) and broil each side for 10-12 minutes or until pork chops are thoroughly cooked inside. (Adjust time depending on whether you thawed first or took directly from freezer.)

Cooking Day 1 and Potty Training Day 4

Well Going to do some cooking prep for when Baby Adam is born. Like I said before I am going to try to get 4-6 meals frozen each week for the next 5-6 weeks then rest the last 2 weeks. So I am gonna share the recipes on here in case anyone is interested in cooking them or just interested in what they are for maybe possible cooking them. So today I am working on 3 recipes and making a double batch or triple batch of each.

Creamy PB Chicken

6 Chicken Breasts
1/2t pepper
1/3c peanut butter
2T soy sauce
3T OJ

Add Chicken to ziploc bag. Remove as much air as possible. In a bowl mix all other ingredients together. Pour into a 2nd ziploc bag and seal tight.. Put both bags in a large bag to keep them together and Freeze.
Cooking Day: Thaw in frig overnight pour into crockpot on low for 6-8 hours. Serve with Rice!

Beef Broccoli Soup

1.5lb Stew beef or cheap steak cut in cubes
3c. Chopped Broccoli
2 4oz cans of Mushrooms drained or 1c fresh mushrooms chopped
1/2c Celery Chopped
1 C carrots sliced
1/4c green pepper Chopped
1qt tomato juice
1/2c water
1/2t salt
1/4t pepper
1/4t thyme
1/4t oregano

Place all in bag except the water and freeze

Cooking day: Thaw over night in frig add to crockpot along with the 1/2c water Cook 8-9 hours on low

Simple Salisbury Steak

1 can of mushroom soup
1/3c dry bread crumbs
1/4 c Finely chopped onion
1lb ground beef
1 egg beaten
1 4oz can mushrooms drained

Mix 1/4c soup, beef, bread crumbs, egg and onion. Shape into patties Freeze individually on parchment paper. Once frozen combine in ziploc bag. in another ziploc bag combine remaining soup and mushrooms

Cooking day: Thaw overnight in frig cook patties in skillet over med heat browning both sides. Stir in the soup and mushrooms bag. Reduce heat to low and cover and simmer for 20 min until done. Turning patties occasionally. Serve over rice or noodles.

Onto our update on potty training

Well we have been trying different methods for a long time now with Isaac. My honest thought is that we started way to early and then once he figured it out he chose not to.. So he knows what to do when to do and how to do. He just stubbornly doesn't want to do. So we took a break for the month of August we just changed him when he needed to be changed didn't talk to him about it and didn't put him on the potty or anything. Monday of this week we started up a new method. 1st day is a freebee day then from then on a little punishment for peeing and pooping in the chonies (boy undies)!

Day 1 went super smoothly. No accidents. Isaac had a blast peeing on the new Froggie potty.

Day 2 went awesome until around dinner time when he had an accident in the chonies. Of course that means it was time for a little punishment. Which was to get a cool shower to clean off all the ick. Unfortunately I think he enjoyed getting the cool shower so about 30 min later he did it again. So back in the cool shower. So I decided to threaten no Chocolate malt with mom for dessert if he had another accident. And that seemed to clear it straight up we were back on track.

Day 3 another awesome day. We had a minor poop incident in the chonies in the morning so we tried the shower punishment again. So I made it a little bit cooler and hosed off more than just his waist and below. I went all the way up to his shoulders and he was not impressed with that. But we didn't have anymore accidents yesterday. And that included being out and about. We went to the school, the bank, and the mall. No problemo. So hopefully we are on the right track for having a fully potty trained almost 3.5 year old. I would like to point out he stayed dry all the way through nap time 12:30pm-4:15pm WOW!

So here we are DAY 4 and starting off strong.. Fingers crossed we keep up the awesome work.
