Day 4 of Meatloaf

Day 4 was postponed till today since we had very special guests all day and I wanted to play instead of cook.. So
Day 4 here we go.

Sage Turkey Meatloaf

INGREDIENTS

MEAT LOAVES

1 1/2 lbs ground turkey

1 c shredded apple (1 med-size)

1/2 c panko crumbs

2 tbsp minced, fresh sage

1/2 tsp salt

1/2 tsp black pepper

Cooking spray

PREP: 10 Minutes

COOK: 25 Minutes

ONION + CIDER GRAVY

1 tbsp Smart Balance

1 large sweet onion (Vidalia), vertically sliced

1 c apple cider

1 c fat-free, low-sodium chicken broth

1 tbsp cornstarch (organic)

1 tsp water

1/4 tsp salt

PREP: 5 Minutes

COOK: 34 Minutes


Directions:

MEAT LOAVES

  • Preheat oven to 425 degrees.
  • Combine first 6 ingredients in a large bowl.
  • Divide turkey mixture into 6 equal portions, shaping each portion into an oval-shaped loaf.
  • Place loaves on a broiler pan coated with cooking spray. Bake for 25 minutes or until thermometer registers 156 degrees.

ONION + CIDER GRAVY

  • Melt Smart Balance in a large nonstick skillet over medium-heat; add onion to pan. Cook 10 minutes or until golden brown, stirring frequently.
  • While onion cooks, bring cider and broth to a boil in a medium saucepan; boil for 23 minutes or until reduced to 1 cup. Combine cornstarch, water, and salt, adding mixture to the cider reduction, stirring constantly with a whisk.
  • Cook over medium heat 1 minute or until slightly thickened. Stir in onion.
  • Serve 1 meat loaf and 1/4 c gravy.

Day 2 was another Success but I didn't really have any doubts with this one because this is the one Recipe I have made before and the family loves.

Day 3 Italian Meatloaf

Ingredients

  • 1 1/4 pounds ground beef
  • 4 (4 ounce) links Italian sausage, casings removed
  • 1 egg, beaten
  • 1 small green bell pepper, chopped
  • 1 onion, chopped
  • 1/2 cup dry hot wheat cereal
  • 1/2 cup milk
  • 1 dash Worcestershire sauce
  • salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Chop sausage finely. In a large bowl combine beef, sausage, egg beat, bell pepper, onion, cereal, milk, Worcestershire sauce, salt and pepper. Mix together and press into a loaf pan.
  3. Bake in the preheated oven for 1 hour, or until cooked through. Drain grease from loaf pan periodically during baking. Let stand 10 minutes before serving.

Day 2 of Meatloaf week

Day 1 was a success I need to get a baster so I can periodically suck up the extra fat.

Day 2 Bacon Swiss Meatloaf

Bacon Swiss Meatloaf


2 bacon strip, crumbled
2 egg, beaten
2/3 butter crackers crushed
1/3 c shredded Swiss cheese
3 T chopped onion
2 garlic clove, minced
1/2teaspoon salt
1/4 teaspoon pepper
1 lb. Ground beef
In bowl combine egg, crackers, 4 Tablespoons shredded cheese, chopped onion, garlic, bacon, salt and pepper. Add beef into mixture and combine. Shape into loaf and freeze wrapped in tin foil or in a ziploc bag. When ready to cook take out of the freezer and place in a loaf pan. Top with more bacon pieces if desired. Bake at 350 degrees for 30 minutes- 1 hour. Test with a meat thermometer.

Day 1 of Meatloaf Week

Well I thought it would be fun and my brother coaxed me to do a 5 day Week of Meatloaf.

Day 1 Mexican Meatloaf

Ingredients

  • 2 eggs, lightly beaten
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 1/4 cup diced onions
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds lean ground beef
  • 1 cup crushed hot and spicy cheese flavored crackers
  • Topping:
  • 1 cup shredded Cheddar cheese
  • 1 cup chunky salsa

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Combine the eggs, tomatoes, onion, Worcestershire sauce, salt, and pepper in a large mixing bowl. Gently stir the ground beef and crackers into the egg mixture. Press into a 8x8 inch square baking pan. Bake in preheated oven for 35 minutes.
  3. Remove the loaf from the oven, and drain any liquid from the pan. Spread a layer of salsa on top of the loaf, and sprinkle with shredded cheese. Return the loaf to the oven; bake until the meatloaf reaches 160 degrees F (71 degrees C) and is no longer pink in the center, about 15 minutes.

I personally will not be eating this because it has tomatos in it and I am Tomato intolerant. But I will let you know tomorrow before tomorrows recipe how the 5-guys (hubby, Brother, and our 3 little guys) liked it.

Adam's One Year Check up

Today was Adam's One Year check up. I am super tired and a little annoyed. We had the 8:40am appt in hopes that we were the first in so there wouldn't be any delay. But we were left sitting for a long time. We got out of our appt at 10am. Seriously. I normally don't mind waiting but waiting with 3 kids is pretty difficult at times. Then being stuck in a tiny room of DON'T TOUCH THOSE just plain ole sucks.

Ok done with the whining.. Drum ROLL
Adam is 29.25in (30.18%) tall and 20#s 11oz (17.83 %)with head circ of 47cm (67.47%)

How he measures compared to Isaac and Noah
Isaac was 29in tall and 21# 10oz
Noah was 29in tall and 22# 11oz

So Adam is a 1/4 in taller but almost 1 # less than Isaac and 2# less than Noah.. I just think it is fun to see their stats.. Well have a good day.. I need desperately to work on Halloween costumes and clean but I am down to just me this weekend (Drill weekend) and turns out they called him up 2 days early to work on stuff before the other Marines get down to Drill! So if anyone wants to come up this weekend and help make Halloween costumes or just plain ole keep the kids occupied while I do let me know.. :D

Wow

Well all of September I wrote only one entry. Mostly due to the fact that OMG am I overwhelmed. Isaac is in 4k and LPM (let's play music) which means that 4 out of 5 mornings in the week I am running around. With this I still have yet to find my groove of taking care of the boys and making sure homework is getting done and getting stuff around the house done. I am sad to say that house work has fallen to the side.

I really need to go through stuff and if we don't use it GET RID of IT. There is just not enough room to store EVERYTHING. We have 3 boys Nick and I and my brother so that is 6 people in our BUSY little house.

Last Thursday was Isaac's First Field Trip. Of course the whole family went since he is in 4k and we got to pick up our pumpkins





On Saturday we celebrated Adam's 1st birthday a few days early. What a great time and thanks to all our wonderful family who joined us.


In True "My Bunch of Klauers" fashion a bear birthday cake.. It is a polar bear



Other News.

This Friday is Isaac's first picture day and we are going to work more on the bathroom. Hopefully we can get the majority of stuff done. Nick is going to take off thursday afternoon and Friday in hopes to get some stuff done on his list. Like Staining the porch and getting the surround up for the bathroom shower downstairs so we can finally call the plumber back. Lots to do.. I just wish it was done.. I would love to get the kitchen and dining room painted and the kids rooms just not enough time or energy.
