Yummy Stew


Chicken Sweet Potato Groundnut Stew

1 Large onion Chopped
2 Tbs Olive oil
2 Large Carrots Large chunks
3/4 inch Fresh Grated Ginger
1tsp Salt
1/4-1/2 tsp cayenne pepper to taste.
2 Large Sweet potatoes chopped
3 cups Chicken stock (2 14oz cans)
3 Chicken Breasts Chopped and cooked
2/3 c peanut butter
1 cup roasted peanuts

Saute onions in oil until translucent. Add carrot, ginger, salt and cayenne pepper and aute for 5 min. Add sweet potato and stock bring to a boil then reduce heat cover and simmer for 10 min. Then add the cooked chicken breasts and simmer for 5 more min or veggies are tender. Stir in the peanut butter and let thicken about 2 min. Serve Garnished with peanuts.
