Day 4 of Meatloaf

Day 4 was postponed till today since we had very special guests all day and I wanted to play instead of cook.. So
Day 4 here we go.

Sage Turkey Meatloaf

INGREDIENTS

MEAT LOAVES

1 1/2 lbs ground turkey

1 c shredded apple (1 med-size)

1/2 c panko crumbs

2 tbsp minced, fresh sage

1/2 tsp salt

1/2 tsp black pepper

Cooking spray

PREP: 10 Minutes

COOK: 25 Minutes

ONION + CIDER GRAVY

1 tbsp Smart Balance

1 large sweet onion (Vidalia), vertically sliced

1 c apple cider

1 c fat-free, low-sodium chicken broth

1 tbsp cornstarch (organic)

1 tsp water

1/4 tsp salt

PREP: 5 Minutes

COOK: 34 Minutes


Directions:

MEAT LOAVES

  • Preheat oven to 425 degrees.
  • Combine first 6 ingredients in a large bowl.
  • Divide turkey mixture into 6 equal portions, shaping each portion into an oval-shaped loaf.
  • Place loaves on a broiler pan coated with cooking spray. Bake for 25 minutes or until thermometer registers 156 degrees.

ONION + CIDER GRAVY

  • Melt Smart Balance in a large nonstick skillet over medium-heat; add onion to pan. Cook 10 minutes or until golden brown, stirring frequently.
  • While onion cooks, bring cider and broth to a boil in a medium saucepan; boil for 23 minutes or until reduced to 1 cup. Combine cornstarch, water, and salt, adding mixture to the cider reduction, stirring constantly with a whisk.
  • Cook over medium heat 1 minute or until slightly thickened. Stir in onion.
  • Serve 1 meat loaf and 1/4 c gravy.
